Leaf Shaped Mini Apple Pies

Fall is in full effect! We've been loving the fall foliage this year, living in upstate New York we're totally spoiled by beautiful reds, oranges and yellows everywhere we turn.  The other thing we have in plenty are fresh apples.  My favorite fall treat is definitely apple pie, and these cute little foliage inspired "leaf pies" combine all of these wonderful autumn favorites...
Leaf Shaped Mini Apple Pies:

-2 or 3 Fresh apples, peeled and diced
-1/4 Cup sugar
-1 Tbs flour
-1/2 Tsp nutmeg
-1/4 Tsp Ground cloves
-2 Tsps Ground cinnamon
-2 Prepared, flat rolled pie crusts
- Red & yellow food coloring
- Egg white from two large eggs
*You will also need a sharp tipped knife for cutting shapes, or leaf shaped cookie-cutters.

Preheat oven to 350 degrees.
Combine diced apples, sugar, flour, nutmeg, cloves, & cinnamon in a bowl and set aside for 5-10mins.  Roll out 1 prepared pie crust onto a floured surface and place spoonful's of the apple filling, spaced out, on the first crust.  Gently lay the second rolled crust over top and push down between the filling piles so that the top dough adheres to the bottom dough.  Using a sharp knife or cookie cutter, cut your leaf shapes (Use the tip of a sharp knife to cut "vein" pattern onto the top of each leaf).  Using a spatula, transfer each leaf pie to a greased cookie sheet.

For Color Glaze:  Mix 1 -2 Tablespoons of egg white with a drop of food coloring and, using a food-safe brush, paint the tops of your leaves. ( I used three colors: yellow, orange and red)

Bake at 350 for approx. 20-30 mins, or when the pies begin to brown.  Set on rack to cool.
Once your pies have cooled, serve and enjoy!
